Weaknesses are odd...
Sometimes, they seem to have no effect beyond normal damage, x2, or even x4 damage.
100+ damage meteor spell which would normally deal ~210 damage did 440 on a hell hound earlier. If you cast Fire Storm or Symbol of Wrath on a group of them, you'll see some getting hit, for say, 21 damage (although, those are normally different monsters in the group not weak to holy), some will get hit for 42, and some get smacked for 84 o.O
Do they have a stance, such as Frenzy, and you just don't see when it activates, so they take another double damage in addition to the natural weakness?
